How vitamin C as antioxidants work?
I did a little experiment .. Juiced an orange .. cut an apple in half and brushed a Part of juice on one half .. 15 minutes later .. half set off by a caramel brown, while the other was still white .. How did this happen? and what is the relationship of vitamin C in oxygen?
Let's be simple: the real name of vitamin C is ascorbate (or ascorbic acid). It is an acid derived from glucose (however: do not think that we produce in our bodies because we can not do), and its formula reveals its function: it has 2 carbon atoms linked by a double bond and bound with a hydroxyl group (-OH). The hydroxyl group is the active part of the molecule, because it can drop the atom Hydrogen: This chemical reaction is called oxidation. When they are oxidized, the molecule has a single bond between carbon atoms (Carbon 3 and 4) and a double bond between C 2 oxygen atoms and one: this is called dihydroascorbate. Antioxidants are substances that oxidize instead of other (biological molecules) thereby protecting against the dangers of this process that destabilize their structure and function.
