The slices mint cookie recipe is a cookie that will deliver a refreshing twelve o'clock pick-me-up! These little treasures are also very well with a cup of tea or coffee!
Ingredients
2 sticks (1 cup) salted butter, softened
3 / 4 cup granulated sugar
1 egg
1 / Extract 4 tbsp Tea Peppermint
2 1 / 4 cups all purpose flour
1 / 2 teaspoon salt
Trim:
1 cup chocolate chips with mint
4 teaspoons shortening

Mixer
Step 1: In a medium bowl, whisk together the flour and salt and set aside.
Step 2: In a large bowl with electric mixer on medium-to high, cream butter and sugar.
Step 3: Add the egg and extract of peppermint.
Step 4: Add flour mixture to creamed mixture, mix well.
Step 5: Shape dough into two 8-inch rolls, wrap each in plastic wrap.
Step 6: Refrigerate for 3 hours or until firm.
Step 7: Remove dough from refrigerator and preheat oven to 350 degrees F.
Step 8: Unwrap and cut into 1/4-inch slices.
Step 9: Place 1 inch apart on cookie sheets greased not.
Step 10: Bake for 9-10 minutes or until edges begin to brown. Immediately transfer cookies to a cooling surface.
Step 11: In a small bowl in microwave, combine semisweet chocolate and shortening, heat over medium-high heat until melted and stir up until smooth.
Step 12: Using a fork, drizzle chocolate over cookies.
Makes 6 dozen cookies.
